I think my favorite breakfast is chocolate chip cookies. They go so well with my coffee :) I love warming them up in my little toaster oven and nibbling them slowly, savoring my quiet house. I think that is the best thing about 6 am. Ahhhh...... quiet. Enjoying the fleeting moments of quiet seems to be common theme for me....... hmmmmm.....
Anyhow, on to my favorite cookie recipe. Enjoy!
GYPSY MAMA OATMEAL CHOCOLATE CHIP COOKIES
1 1/2 cup unbleached flour
1 1/2 cup wheat flour
1 1/2 cups oats
3/4 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 pound (2 sticks) butter, room temp
1 1/4 cup dark brown sugar
1 TBSP vanilla extract
1 TBSP milk
2 large eggs
2 cups chocolate chips
*good mix ins: 1/2 cup cranberries or 1/2 cup chopped nuts
*Preheat your oven to 375. Whisk dry ingredients together & set aside. Cream butter & sugar until light & fluffy. Add eggs, vanilla & milk. Mix well. Add the dry ingredients to the wet ingredients. Mix well. Add chocolate chips and anything else you think should be in your cookie. Bake 5 minutes. Rotate cookie sheet and bake another 3-5 minutes until edges are golden and center is set.
PS ~ I usually bake half of these and freeze the other half for "homemade cheater cookies" as we call them. Not exactly sure how they got that name...... anyhow they freeze well in a tightly lidded container for up to three months...... not that they'll last long :)
